Yoichi

Sourced exclusively from the Yoichi distillery, this no-age-statement single malt expresses the distinct character of Japanese coastal style. The malted barley used is partially peated, and distillation is carried out using coal-fired pot stills, following traditional Scottish methods still in practice at Yoichi. Maturation takes place in American oak casks, some of which previously held xérès, enhancing the spirit’s aromatic richness while preserving its core character. The nose reveals dry smoke, seaweed, stewed yellow fruits and polished wood. On the palate, the structure is firm, with notes of leather, mineral peat, toasted oak and roasted cereals, underpinned by saline and spicy nuances. The finish is long, featuring wood fire, black liquorice and bitter cocoa. This single malt faithfully represents the robust and balanced personality of Yoichi whiskies, shaped by Hokkaido’s climate and traditional production choices.
