Crafted from barley grown exclusively on Ballybannon farm in County Carlow and peat sourced from County Kildare, this single malt exemplifies Waterford Distillery’s single-farm origin philosophy. With a peat level of 47 ppm, it represents a revival of traditional Irish practices, reimagined through advanced traceability and precision-driven methods. Following prolonged fermentation and slow distillation, this whisky matures in a combination of four cask types, including ex-bourbon barrels, French wine casks and virgin oak. The aromatic profile combines vegetal, ashy peat with maritime salinity and soft fruit notes. The nose reveals a smoked character layered with coastal nuances, almond, honey and ripe apple. On the palate, the texture is robust, featuring earthy peat, almond paste, apple tart and buttery undertones. The finish extends with saline and green notes, delivering a balance between peated intensity and site-specific expression.
