Planteray Pineapple

Planteray Stiggins’ Fancy Pineapple is a multi-origin rum composed of molasses-based distillates from Barbados, Jamaica and Trinidad. Drawing inspiration from historical references in the work of Charles Dickens, this spirit employs a dual pineapple infusion process using the Victoria variety, prized for its intense aromatic profile and high natural sugar content. The peels are infused in Planteray 3 Stars rum and redistilled, while the fruit pulp is macerated in Original Dark rum. The components are then blended, preserving the identity of each origin. Fermentation times vary from 73 hours in Barbados and Trinidad to two weeks in Jamaica, and distillation involves a combination of twin columns, John Dore pot stills, and the Ferrand copper still in France. The final product is lightly sweetened at 20 g/L. This infused rum reveals a structured aromatic palette, led by exotic, resinous and candied fruit notes, built upon a technically precise foundation. It reflects Planteray’s philosophy of honouring tradition through careful experimentation and blending expertise.
