Renowned for the quality of its sugar, Demerara has given the world some of the finest rums. Ravaged by the 20th-century industry crisis, it now has only one active distillery: Diamond Distillers Limited, which has acquired certain stills from the region, allowing their style to come back to life. This is the case with the Enmore Still, the only wooden column still in the world. This 1988 bottling demonstrates a strong character (spicy wood, Russian leather, beeswax) but an infinite delicacy on citruses and floral aromas.
